| Executive Chef Felix Salcedo has gained national recognition with his refined sauces and expert use of chilies, seafood and wild game.
His lengthy culinary career began in 1975 working as an assistant cook under legendary restaurateur Hans Prager, at Prager’s Bell & Crown Restaurant. Moving quickly through the ranks, Felix was selected to be Chef Prager’s Sous Chef and then finally achieving Executive Chef status before leaving Mr. Prager to become Executive Chef at The Original Sonora Café owned and operated by renowned restaurateur Ron Salisbury in 1986.
Felix found his home with The Restaurant Business, Inc. (RBI, Inc), which currently operates 7 Full Service Restaurant’s including; El Cholo Spanish Café in Los Angeles, El Cholo Santa Monica, The Original Sonora Café in Los Angeles, Café El Cholo in La Habra, The Cat & the Custard Cup in La Habra, El Cholo Cantina in Irvine and Cannery Seafood of the Pacific in Newport Beach.
Felix says that the move has allowed him to travel both internationally and nationally and continue to develop the concept of food preparation and presentation.
